This Thanksgiving, feast on a ketogenic meal of turkey, gravy, and stuffing, followed by Pumpkin Spice Parfait

Ingredients

 

  1. Instructions

  2. Mix cream, broth, and butter to make a gravy.
  3. Serve gravy over cooked turkey breast and prepared KetoVie Café Savory Stuffing.

Pumpkin Spice Parfait

Pumpkin Spice Parfait

Pumpkin Spice Parfait 4:1

Ingredients

  • 28g KetoVie Café Cinnamon Donut Delight (1 donut)
    14g canned pumpkin (1 Tbs)
    11g unsalted butter (2½ tsp)
    14g cream cheese (1 Tbs)
    1 packet Truvia® (3.5g)
    5g whipped heavy cream (1 tsp unwhipped)
    0.5g cinnamon (pinch)

Instructions

Thaw one donut and allow the butter and cream cheese to soften at room temperature.
Crumble the donut or slice it into 3 equal slices.
In a small zip top bag, combine the canned pumpkin, butter, cream cheese and Truvia. Zip the bag closed and squeeze the bag to combine all the ingredients. Snip the corner of the bag to squeeze out all of the puree.
In a small parfait glass, place a layer of donut followed by the pumpkin mixture. Add the rest of the donut crumbles, then top with the whipped cream.*
Sprinkle with the cinnamon and serve immediately.

Tip: To lower the ratio, reduce the butter.

*Use an Isi® Easy Whip for extra fast and easy whipped cream.

Keto Strawberry Shortcake

We’re posting this keto-friendly 3:1 recipe in honor of National Strawberry Shortcake Day (June 14). Enjoy!

Makes 1 strawberry shortcake

Ingredients

  • 15 grams heavy cream (about 1 Tbsp)
  • 2 grams vanilla extract (about 1 tsp)
  • 30 grams strawberries, raw (about 4 Tbsp)
  • 5 grams of egg (raw, mixed well) (about 1 tsp)
  • 20 grams KetoVie Vanilla (about 1 Tbsp + 1 tsp)
  • 28 grams Kwik Mix (about 4 Tbsp)

 

Directions

  1. Preheat oven to 350 degrees.
  2. Line a small muffin tin with a muffin liner (you will only be using one muffin cup).
  3. Weigh the egg and vanilla extract.
  4. Add wet ingredients to Kwik mix and stir to combine.
  5. Drop mixture into one muffin cup and smooth to even. Place water in the remaining cups.
  6. Back for 15-17 minutes or until the edges are golden brown and the center is cooked.
  7. While muffins are baking, weigh and measure KetoVie and heavy cream.
  8. Using a mixer, whip the Ketovie/cream mixture until medium to stiff peaks form, about 2-3 minutes.
  9. Weigh out the strawberries, assemble, and enjoy!
