Kwik Mix Berry Crumble

We think breakfast can be the most challenging keto meal of the day. It is too easy to get stuck in a rut. Eggs again? Great.

Here are some KetoVie Café breakfast inspirations to help you mix it up.

1. Kwik Mix Donuts 4:1

This simple recipe uses our standard Kwik Mix waffle/pancake recipe, but you prepare it using a mini-donut maker. You can get as creative as you want, adding on whipped cream, nuts, carb-free frosting or sprinkles (food coloring + Truvia). Pictured below is a plain vanilla (using DaVinci Sugar Free Vanilla Syrup) and a chocolate (unsweetened cocoa powder) variety.

    • Ingredients

28g KetoVie Café Kwik Mix (¼ cup)
30g heavy cream, 36% (2 Tbsp)
37g egg, beaten well (¼ cup)
10g canola oil (2 tsp)
7g water (2 tsp)

  • Directions

Heat mini-donut maker and grease with cooking spray.
Whisk all ingredients until blended and pour on donut molds.
Close the lid and wait for indicator light to tell you it is finished.

Allow to cool.

2. Wholesome Bread Chicken Biscuit

Okay, so maybe it’s not really a biscuit, but it’s really good! We use a Wholesome Bread roll to make this delicious breakfast sandwich.

  • Ingredients

50g Wholesome Bread 3.5:1 (1 roll)

9g Claussen Kosher Dill Pickle Chips (2 chips); save some pickle juice for  marinating

31g Chicken breast, raw, no skin (1oz)

10g Hellmann’s Mayonnaise (2 tsp)

10g Olive oil (2 tsp)

  • Directions

Trim your chicken breast down to the desired portion. You can butterfly (slice through the middle) to get a bigger surface area. Marinate your piece of chicken in pickle juice for 10 minutes. Pat dry and salt/pepper.

Pour oil in a heated pan and cook chicken breast through. Remove from pan.

Slice bread roll in half and toast on both sides in the oiled pan. The goal is to soak up any remaining oil. Allow bun to cool.

Swipe mayo on the inside of your toasted roll.

Assemble your sandwich with cooked chicken and pickles.

3. Spinach and Blue Cheese Quiche

Now we’re gettin’ fancy. These little finger foods are a real treat for breakfast, brunch, or  any time.

  • Ingredients

28g KetoVie Café Cheddar Dough 3:1 (1 ball)

18g Egg, raw, mixed well (1 Tbsp + 1/2 tsp)

8g Cream, 36% (1 tsp + ½ tsp)

5g Frozen spinach (1/2 Tbsp)

8g Butter (1 tsp + ½ tsp)

4g Blue cheese (1 tsp)

  • Directions

Set out a cheddar dough ball to thaw at room temperature.

Preheat oven to 350°F.

Mix together egg, cream, frozen spinach (finely chopped), softened butter and blue cheese.

Tear apart cheddar dough into three equally sized smaller balls.

Shape into a quiche crust in a mini-muffin tin.

Pour your egg mixture into each mini-quiche.

Bake at 350°F for 20min or until set.

Allow to cool before removing from the pan.

Makes 3 mini quiches (1 serving)

Tip: Make a large batch and freeze for an easy grab and go breakfast. Just pop in the microwave to reheat.

4. Bacon, Egg and Cheese Balls

Another grab-and-go breakfast idea. Make a week’s worth of these and keep them in the refrigerator.  They also freeze beautifully for future breakfasts on the go.

  • Ingredients

9g Smithfield bacon, cooked crisp (1 slice)

15g Egg, raw, mixed well (1 Tbsp)

10g Cheddar cheese (2 tsp)

28g KetoVie Café Kwik Mix (1/4 cup)

10g Olive oil (2tsp)

  • Directions

Cook bacon crisp and allow to cool. Chop into tiny bacon bits.

Preheat oven to 350°F.

Mix together egg, cheddar, Kwik Mix and olive oil.

Roll the mixture into 3 evenly sized balls using your hands.

Roll the dough balls around in the bacon bits to coat.

Bake at 350°F for 20 minutes or until a tooth pick comes out clean.

Allow to cool.

Makes 3 balls (1 serving)

Tip: Add a pinch of garlic powder and dried parsley to ramp up the flavor.

5. Kwik Mix Berry Crumble

Tasty and full of antioxidants. Yes, please.

  • Ingredients

50g Blackberries, raw (1/3 cup)

5g Chia seed, ground (1 tsp)

3.5g Truvia (1 packet)

28g Kwik Mix (1/4/cup)

0.1g Ground cinnamon (pinch)

10g Butter (2 tsp)

  • Directions

Preheat oven to 350°F.

In a small ramekin,mash berries and chia seed together and set aside.

Crumble together Kwik Mix, Truvia, cinnamon and butter.

Top your Kwik Mix crumble onto the berries.

Bake a 350°F for 20 minutes or until crumble begins to darken.
